FIRESIDE IGNITING BONIFACIO HIGH STREET


          I absolutely love the work of Chef Chiloy Santos, the man behind institutions such as Tender Bob's, Kettle and Fireside. I am a fan of American Cuisine, and Chef Chiloy admittedly draws a lot of his inspiration from his travels around the United States. When his latest concept, "Fireside by Kettle" opened at SM Mega Fashion Hall a couple of years ago, I made sure to be there on the first week that it opened with my family to celebrate my birthday. Since then, I've been back a few more times, and each time I've visited, the food has remained consistent, with the food getting better and better each time. 

           The success of the Megamall branch has led to an inevitable expansion, this time at Bonifacio High Street.            




            I was flabbergasted that my My friends Princess of PhantasmDarkstar.com and Bettina Bacani of BettinaBacani.com had never been to Fireside before, but at the same time, I'm was excited to see their reaction to the amazing food that Chef Chiloy would be bringing out!

      Before the meal began, the ladies got the ball rolling with a few glasses of Sangria!


APPETIZERS AND SOUPS

         Being the Fireside "Veteran" among my friends, I made sure they ordered the unique Sweet Corn Cappuccino (P129) as one of our starters, a dish I fell in love during my first visit to Fireside. Chef Chiloy also recommended the Grilled Tomato & Chorizo Soup (P249), because of its vibrant flavors that paired perfectly with the parmesan bread. 


        The Mascarpone Cheesecake (P359) was nothing short of amazing. Served with Arugula, and  Croutons, you dig into the cheesecake and find a sweet tomato jam, which finds a way to seamlessly meld its flavor into the cheese. 


        Chef Chiloy intended the Brisket Sisig (P299) to be served as an appetizer, but with sisig this good, it DEMANDS garlic rice.The delicious chunks of beef one the sizzling hot plate were peppered with bits of chili, giving the right amount of heat with every bite. And the good news? You can even order a fried egg with this!  

MAINS



         I requested for the 50/ 50 Meatloaf (P389), which is one of my favorite dishes from Fireside. This delicious meatloaf dish is made with 50% ground Angus beef, and 50%... wait for it.. Ground BACON.

          The Meatloaf is served with a homemade barbeque sauce, which ensures that the meat never becomes too cloying, and a side of delicious garlic mashed potatoes. 


         Being with two lovely ladies who are watching their figures for their boyfriends, Chiloy brought out the Grilled Halibut (P399). The beautifully cooked fish was doused in a Bacon vinaigrette, and was perched over a quinoa veggie salad. 


      No visit to Fireside is ever complete without trying their Buttermilk Fried Chicken Fingers (P489). Delicious cutlets of chicken are brined for 24 hours, then coated in a tasty Cajun Ritz breading, then deep fried to golden deliciousness. The fingers are served with a home style gravy and cornbread doughnuts, and believe you me, it's absolutely magical. 

DESSERTs

       Although Fireside is known for their food, their desserts must not be overlooked! The Banana Foster Creme Brulee (P189)Homemade Smores (P139) in particular were spectacular. 


       Thankfully, I was managed to get a taste of the S'Mores before Phantasm Darkstar polished it off. When eating with these two lovely ladies, if you don't eat fast, you don't eat!!




           And finally, Chef Chiloy brought out a limited edition item on his menu.. The Ube Shake N' Bake! The Shake is quite thick since it's basically mixed down with an ube cake, and topped with Whipped Cream and Chocolate Sprinkles, and i'm telling you, it's a showstopper. It had the perfect balance of sweetness that any ube lover would be crazy over.
             


          I won't lie. Since my companions annihilated both the Creme Brulee and the S'Mores, I was hoping that they'd be so full, that I'd have the Shake N' Bake all to myself. Unfortunately, Cess and Bettina managed to find a secret compartment in their stomachs to make room for some of that incredible shake. 


     Fireside is still one of my go-to restaurants for when I'm looking for an excellent meal. With three branches strategically located at Megamall, Central Square and Rockwell, I'm looking forward to even more Fireside branches opening around the metro!
